My Meal Plans

The Medifast Meals are really easy to plan and prepare, which is one thing that makes Medifast work so well. However, this could be a great space for us to share our favorite Medifast Meals and Lean & Green meals.

I’ll share some of my favorite meal plans here, but it’s also up to all of you to post some of your favorites below. Hopefully all of our ideas together can give people some real nice meal plan ideas.

Day 1:

Medifast Meal 1:
Medifast Maple & Brown Sugar Oatmeal

Medifast Meal 2:
Medifast Strawberry Crème Shake

Medifast Meal 3:
Medifast Chicken Noodle Soup

Medifast Meal 4:
Medifast Tropical Punch Drink

Lean & Green Meal:
Turkey/Asparagus roll-ups made with 6 oz. turkey and 1 cup asparagus stalks
½ cup garlic-sautéed spinach

Medifast Meal 5:
Medifast Chocolate Pudding

Day 2:

Medifast Meal 1:
Medifast Scrambled Eggs sprinkled with a touch of Tabasco® sauce

Medifast Meal 2:
Medifast Ready-to-Drink Dutch Chocolate Shake

Medifast Meal 3:
Medifast Peanut Butter Bar

Medifast Meal 4:
Medifast Cream of Broccoli Soup

Lean & Green Meal:
1-½ cups grilled portobello mushroom caps, topped with 4 oz. low fat mozzarella cheese

Medifast Meal 5:
Medifast Orange Crème Shake (mixed with 8 oz diet/caffeine-free, lemon-lime soda)

Day 3:

Medifast Meal 1:
Medifast Hot Cocoa

Medifast Meal 2:
Medifast Peach Oatmeal (baked into the suggested recipe from the back of the box)

Lean & Green Meal:
5 oz. rosemary lamb loin
cucumber mint gazpacho soup (made with cucumber, fresh mint leaves, dry mustard and sour cream – see recipe at end of Meal Plan)

Medifast Meal 3:
Medifast Orange Crème Shake

Medifast Meal 4:
Medifast Lemon Yogurt Bar

Medifast Meal 5:
Medifast Minestrone Soup

Day 4:

Medifast Meal 1:
Medifast Dutch Chocolate Shake

Medifast Meal 2:
Medifast Chocolate Bar

Medifast Meal 3:
Medifast French Vanilla Shake (mixed with 8 oz. diet root beer—tastes like a root beer float!)

Medifast Meal 4:
Medifast Cream of Chicken Soup

Lean & Green Meal:
5 oz. grilled sirloin steak
Spaghetti squash primavera (made with ½ cup mixed green bell peppers, zucchini, mushrooms and shallots; 1/3 cup diced plum tomatoes; 2/3 cup spaghetti squash; olive oil; parmesan cheese; garlic; basil leaves – see recipe at end of Meal Plan)

Medifast Meal 5:
Medifast Ready-to-Drink French Vanilla Shake

Day 5:

Medifast Meal 1:
Medifast Swiss Mocha Shake (mixed with 8 oz decaf coffee)

Medifast Meal 2:
Medifast Vanilla Pudding

Medifast Meal 3:
Medifast Cream of Tomato Soup

Medifast Meal 4:
Medifast S’Mores Granola Bar

Lean & Green Meal:
2 Morning Star Farm Classic patties
Mashed cauliflower (measure 1-½ cups before mashing) with 1 tsp trans fat-free margarine, sprinkled with parsley flakes

Medifast Meal 5:
Medifast Tropical Punch Drink (frozen)

Recipes

Cucumber Mint Gazpacho Soup
1 cucumber, peeled (seeded, if desired) and chopped to ¼” diced
½ cup cucumber, peeled and seeded, finely diced
1-2 Tbsp fresh mint leaves, chopped
¼ tsp English-style dry mustard
1-2 tsp sour cream (any variety, optional)

1. In a blender, puree 1 cup chopped cucumbers, dry mustard, 1 tsp sour cream and salt and pepper to taste.
2. Transfer to a bowl and chill overnight (or at least 6 hours).
3. Stir in finely diced cucumber and chopped mint.
4. Garnish soup with 1 tsp sour cream (optional) and mint sprigs or additional chopped mint leaves.

To create a deeper shade of green for the gazpacho, replace ¼ cup of peeled, seeded cucumber (¼” diced) with ¼ cup of diced green bell pepper.

Spaghetti Squash Primavera
½ cup TOTAL of the following vegetables:
- Green bell pepper, diced
- Zucchini, diced
- Mushrooms, diced
- Shallots, sliced
1/3 cup plum tomato, diced
2/3 cup spaghetti squash, cooked
½ tsp olive oil
1 Tbsp parmesan cheese, grated
1 garlic clove, minced
½ Tbsp water
¼ tsp basil leaves, dried

1. Heat oil in medium pan over low heat.
2. Add bell pepper, zucchini, mushrooms, shallots and garlic.
3. Cook 8-11 minutes or until vegetables are crisp-tender, stirring occasionally.
4. Stir in tomato, water and basil.
5. Cook 3-4 minutes, stirring occasionally.
6. Serve vegetables over cooked spaghetti squash.
7. Top with 1 Tbsp grated parmesan (optional condiment).
8. Salt and pepper to taste.
